A recipe inspired by Nasreen and by Oddbox. I purposefully left out turmeric as one of our number doesn't like it. It was commented that "you've found a way to make kale taste good!" I took this as high praise indeed and thought it warranted a mention in this blog.
IngredientsTwo bunches kale
3 onions
4 cloves garlic
1/2 green chilli
1 knob of ginger
1 tbsp each of: cumin seeds, fennel seeds, black mustard seeds & coriander seeds
5 cardamom pods
1 tin coconut milk
1 tsp tamarind paste
Method
Finely chop the onion and gently fry till soft.
Toast the spices in a hot, dry pan until the seeds start to pop. Remove from heat and pound with a pestle and morter.
Meanwhile finely chop the ginger, chilli and garlic and add to the onions just before the end.
Now add the spices, pour over the coconut milk, stir in the tamarind paste and add the kale.
Simmer the kale till wilted and tender.
