I thought I had nothing in for supper, then came up with this quick, delicious and nutritious tapas type dish - and carrot fritters which might feature in another post...

Tin of canellini beans
2 cloves garlic
Juice of 1/2 lemon
2 tbsp tomato purée
Several drops tabasco
1-2 tbsp olive oil
Parsley
Method
Finely chop and gently fry garlic. Meanwhile drain and thoroughly rinse the canellini beans. Add the other ingredients and heat through.
