Jansson's Temptation

You can't really go wrong with mackerel, egg, onion and potato. Here's something that worked particularly well. It's modelled on the Norwegian dish Jansons Fristelse which uses pickled herring instead.


Ingredients
2 onions
2 potatoes
2 fillets smoked mackerel
2 eggs
170ml milk

Method
Heat tge oven to 175 degrees. Butter a small oven-proof dish.
Finely slice the onions and fry them on a low heat till soft. Do not allow them to brown.
Finely slice the potatoes.
Now layer the potatoes, onions, fish in chunks and potato again.
Beat the eggs and add the milk then pour the liquid into the dish so it fills all the spaces.
Cover with foil and bake for 30 minutes.  Remove the foil and bake for a further 30 minutes.

Utterly delicious!
