Since we're all meant to be eating more beans and pulses, here's a spicy, tasty way to do so. It's vegetarian, but tastes hearty. I served it with ketchup, but I guess salsa would be more sophisticated! Tzatziki would be great too. The whole thing takes about 20 minutes - maybe just under.
Ingredients
1 tin of chick peas
1 packet puy lentils
2 onions
2 eggs
6 sprigs thyme
1 tsp chilli powder
1 tsp ground cumin
1 tsp ground ginger
2 cloves garlic
1 tbsp tahini paste
plain flour
Olive oil for frying
Method
Chop and fry the onion till cooked through.
Meanwhile mix the beans, eggs and tahini and blitz in a food processor or using a hand mixer till coarsely chopped.
Add the garlic, cumin ginger and chilli to the onion, then remove from the heat. Add a tablespoon cold water to rinse the pan and add this paste to the beans.
Add thyme. Mix well.
Form into balls and roll in flour.
Shallow fry in very hot olive oil.
