Aubergine pâté

I'm having a bit of a mezze phase at the moment. So many yummy things to make! I love this combination of aubergine, Greek yogurt and garlic. I wanted to call it baba ghanoush, but it isn't really. It's my own creation and therefore getting its place in this particular hall of fame.

Ingredients
2 aubergines
1 clove garlic
4 tbsp Greek olive oil
3 tbsp Greek yoghurt

Method
Peel and slice the aubergines (either across or along - makes no difference). Gently fry them in the olive oil till they are soft and silky with a glassy sheen. Now take them off the heat and stir in one crushed clove of garlic. (I often use two.) Blitz them with the hand-held blender and then add the yoghurt and stir it in. Chill. Serve.
